Abstract
For ensuring the competitiveness of production in existing conditions of market economy not enough simply to comply the requirements provided by normative documents. For the development of sustainable attractive image of the product often it is required to take into account the special wishes of consumers to quality of products.
In the article the method of assessment of quality level of bakery products is offered, allowing to consider a wide range of consumer wishes and normative documentation.
