Abstract
In article current trends of development of the sphere of public catering in Russia are investigated.As a result of research it is revealed that financial stability of the organizations depends on a place of their arrangement and quality of management. These factors had essential impact on structure of this market in Russia.Further development of the sphere of public catering will be based on franchizing.
