Abstract
In modern conditions, for each catering is especially important to assess properly the market situation to offer an effective means of competition, which, on the one hand, would meet the current market situation in Russia and the tendencies of its development, on the other hand - the features of a restaurant business. The experience of recent years suggests that not all russian enterprises are ready for a competitive struggle.
