Introduction. The aim of our work was developing quick method of sturgeon caviar quality control. Using this method it was necessary to separate caviar which is possible to use for hatchery purposes from the caviar which could be used only in food industry.
Express-test of caviar quality. In our previous works [1],[2] it was shown that that high levels of such lipid fractions as phosphatidylcholine and cholesterol esters provide good hatchery quality of caviar. High levels of lysophosphatidylcholine and diacylglycerides are indicators of low quality of hatchery caviar.
The results of correlation between lipid composition and caviar quality are presented at Fig 1 and Fig 2.

At Fig 1 and Fig2:
- lipids
- phospholipids
- cholesterol
- cholesterol esters
- diacylglycerides
- monoacidglycerides
- phosphatidylcholine
- lysophosphatidylcholine
So, it is possible to predict the caviar quality by it lipid composition. Unfortunately a lot of time requires for the caviar lipid composition study.
Possible mechanisms of lipid composition influence on hatchery quality of caviar are described in the article [3]. It is made a conclusion, that main reason of hatchery quality decreasing is the increasing of reactive oxygen species concentration.
For example, lysophosphatidylcholine is an inhibitor of superoxide dismutase, so the growth of lysophosphatidylcholine concentration leads to the growth of reactive oxygen species concentration.
Using electron paramagnetic resonance it is possible to detect concentration of reactive oxygen species and other free radicals in a rather short time. In our previous work we show that using electron paramagnetic resonance it is possible to determine the concentration of NO and NO2 at the air better, then using traditional methods [4].
So, it is possible to use electron paramagnetic resonance for caviar quality control. Caviar with low concentration of reactive oxygen species could be used for hatchery purposes.
The advantages of express-test based on electron paramagnetic resonance:
- this is very quick method
- no chemical reagents are necessary
Conclusions.
- Caviar with low concentration of reactive oxygen species could be used for hatchery purposes.
- It is possible to use electron paramagnetic resonance it is possible to detect concentration of reactive oxygen species and other free radicals in the caviar.
- Express-test based on electron paramagnetic resonance required less time, then other methods of caviar quality forecast.
